This is Al’s favorite! With more pineapple than mango, this jam screams summertime! We originally thought it would be great over ice cream, but it has turned into so much more. Use it as a topping for fish by mixing with cream cheese and a little balsamic vinegar or as a glaze over any cooked fish. It also works well as a dip for shrimp. Mix it with your favorite salsa for something sweet and spicy! Not too shabby on a bagel either.
